Sushi Specific terminologies used in Japan
Some specific terminologies used in Japanese sushi restaurants, which are Japanese words but they don’t use them outside of Sushi restaurants or would have different meaning.
Agari あがり
Agari usually means at the end or finishing. In sushi restaurants, it means tea.
Since, most of people drink tea to refresh their mouths at end of the meal.
Aniki あにき
Aniki means elder brother, and in Sushi restaurants it means older fishes, which have to be used before new fishes
Arajikomi あらじこみ
ara means, rough, and jikomi is from shikomi, preparation
Odori オドリ
odori means dancing, some of seafoods dancing on dishes
Kappa かっぱ
Cucumber
Gari ガリ
Ginger pickles
Gyoku ぎょく(玉)
Thich fried egg
Kusa クサ
seaweeds
Gunkanmaki 軍艦巻き
Rolled Sushi with topping, ikura(salmon roe), Uni(sea urchin) negitoro(minced tuna & onions), etc
Geso げそ
Arms of squids
Geta げた

Shari しゃり
Sushi rice
Tane, Neta タネ、ネタ
toppings, material, fishes
Zuke づけ
Soy sauce marinated Tuna
Tsume(Nitsume) つめ(煮つめ)
stewed sauce
Tekka てっか(鉄火)
Red part of Tuna, or rolled red part of Tuna with seaweeds
Toro とろ
Most likely Tuna's fat-laced, butter-soft belly part, sometimes butter-soft belly part of other fishes
Donshari どんしゃり
Steamed rice, not sushi rice, without any vinegers, salt and sugars
Namida なみだ
Wasabi, since may Namida(tear drops)
Nikiri 煮きり
Stewed with Sake etc. to reduce flavor of soy sauce
Nigiri にぎり
Sushi made with Nigiri(handgripped) rice
Hikarimono 光もの
Sushi with shiny skin fishes
Murasaki むらさき
Soy sauce
