What is Sake Lee ?
Sake lees are solids that are made by fermenting and aging rice, jiuqu, yeast, and water, which are the raw materials for making Sake, and then squeezing them out.
The shape of Sake lees can be roughly divided into two types: "plate lees" and "rose lees".
As the name suggests, Sake lees are flat and plate-shaped, and are the most commonly used Sake lees. Sake lees are Sake lees that are spilled during squeezing or are soft.
In addition, there are also pastes made by kneading plate lees and rose lees, and Sake lees that have been further fermented for pickles such as Narazuke.
